1. Heat the oil in a pan and gently fry the onions for 20 minutes until softened and golden, stirring occasionally. Add the garlic, balsamic vinegar and plenty of seasoning. Cook together for a few more minutes.
2. Preheat the oven to 200°C/Gas 6. Unroll the pastry and cut into 4cm squares. Put on a large baking sheet, placed a little apart. Spoon a little of the onion mixture onto each square. Top with olives, sun-dried tomatoes and some cheese. Bake for 10 - 12 minutes until puffed up and golden brown.
