1. Lightly grease a medium, shallow ovenproof dish. Spread the sliced brioche on one side with a little butter.
2. Toss the sultanas and sugar together. Arrange layers of the brioche in the dish, butter-side up, sprinkling with the sultanas and sugar between each layer.
3. In a large bowl or jug, whisk the eggs until light and foamy. Add the milk, cinnamon and vanilla seeds. Whisk well, then pour through a sieve over the buttered brioche and leave to stand for 30 minutes. Preheat the oven to 180°C/Gas 4.
4. Bake in the centre of the oven for 30-40 minutes until golden brown and just set. Allow to cool for about 5 minutes before serving.
