Serves 4

Ingredients

  • 2 tbsp olive oil
  • 4 lamb shanks
  • 1 large onion, chopped
  • 4 garlic cloves, peeled and crushed
  • 400g can tomatoes
  • 225ml red wine
  • 225ml lamb or chicken stock
  • 2 sprigs fresh rosemary
  • 1 bay leaf
  • Finely grated zest ½ orange
  • 2 pinches caster sugar
  • Cornflour, to thicken (optional)
  • Salt and freshly ground black pepper

Method: How to make braised lamb shanks

1. Preheat the oven to 150°C/Gas 2. Heat the oil in a large, flameproof casserole and brown the lamb all over, turning regularly with tongs.

2. Add all the remaining ingredients and season with salt and pepper. Bring to the boil, then cover and put in oven for 3 hours until the meat is very tender.

3. Remove the lamb shanks, transfer to a plate and keep warm. Discard the rosemary and bay leaf. Liquidise the sauce with a stick blender and thicken if necessary. Adjust seasoning and serve over the lamb.

  1. I watched the show on Thursday and loved it! I thought the four of them made a great bunch and it makes a change that they all got on well rather than the usual bickering..... Despite Benito winning, I thought the scores were fair and reflective of the cooking although I secretly wanted Wendy to win as I thought her menu was the most appetising looking - I just had to try this recipe (it's cooking right now ready for tomorrow's Sunday dinner!), and I'm adding Butternut Squash to my shopping list to make her soup! Thanks for your inspiration Wendy :)
