Serves 4

Ingredients

  • 500g braising steak, cut into 4cm pieces
  • 3 large potatoes, peeled and cut into roughly 3cm cubes
  • 1½ cups frozen sliced carrots
  • 1½ cups frozen peas
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • ½ tsp crushed garlic
  • 3 tbsp korma paste
  • 400g can chopped tomatoes
  • 2 tbsp coconut powder (mixed with enough warm water to make a thick paste)
  • 2 tbsp chopped fresh coriander
  • Salt to taste

Method: How to make beef and vegetables in Swahili spices

1. Place the beef in a large saucepan, add a good pinch of salt and cover with water. Bring to the boil then reduce the heat and simmer for 1½- 2 hours or until tender. You will need to top up the water now and then and skim any foam from the surface as it rises.

2. Cook the potatoes in a large pan of simmering water for 10-15 minutes until tender, adding the peas and carrots for the last 5 minutes of cooking time. Drain through a colander and reserve the water.

3. Heat the oil in a large saucepan and gently fry the onion and garlic for 5 minutes until softened. Stir in the curry paste and chopped tomatoes and bring to the boil. Add 450ml of the vegetable cooking water and simmer for 10 minutes, stirring occasionally.

4. Stir in the drained vegetables and coconut paste. Cook gently for 5 minutes, stirring regularly until hot. Drain the beef and stir into the vegetable mixture. Add the coriander and season to taste.

5. Serve with Mikimo, a blend of mashed potatoes, peas and sweetcorn.
