
Seamus kicks off his menu with this bay scallops in tarragon and lime with angel hair pasta recipe on Come Dine With Me Norwich
1. Cook pasta in a pan of boiling salted water until al dente. Keep ¼ cup cooking water, and then drain the pasta through a colander.
2.While the pasta is cooking, pat scallops dry and season with salt and pepper. Heat half the butter in a 30cm non-stick frying pan over moderately high heat until the foam subsides, then sauté half the scallops, turning, until golden, about 3 minutes.
3.Transfer with a slotted spoon to a bowl. Cook the remaining scallops in the reserved butter in the same way. Add the first batch of scallops to the frying pan and stir in the lime juice and tarragon.
4.Toss pasta in a bowl with half the scallops and ¼ cup of pasta cooking water. Top the pasta with remaining scallops and sauce and season with salt and pepper.
