1. Halve the avocados and remove the stones and skin. Cut each half lengthways into six slices and place on individual serving plates. Slice the smoked tofu and insert in between the slices of avocado.
2. In a saucepan, toast the sesame seeds over a high heat until starting to brown. Allow to cool a little, then sprinkle liberally over avocado and tofu. Season with salt and pepper, drizzle with mustard vinaigrette and serve.
Cauldron brand is the most common smoked tofu, but Taifun smoked tofu is even nicer if you can get it.
3. To make a mustard vinaigrette take the olive oil, white wine vinegar, mustard, salt and pepper. Put in a lidded jar and shake until well combined, or place in a bowl and whisk.
