1. Preheat the oven to 180°C/Gas 4. Bring a pan of water to the boil and cook the sweet potato slices for 4-5 minutes until just tender. Drain in a colander under cold running water and set aside. Heat a non-stick frying pan and cook the vegetarian sausages in the oil until well browned, stirring regularly.
2. Toss the cooked sweet potatoes, sausages, apples, sweetcorn, cinnamon and nutmeg in a large, ovenproof dish. Cover and bake in the centre of the oven for about 35 minutes or until the apples are tender. Serve hot.
