Cream, cream, banana, cream, rum, cream, and...wait for it... cream!

Ingredients

  • block of ready-made dessert pastry
  • ½ block of butter
  • 1 banana per person
  • brown sugar
  • good-sized ladel of dark rum
  • clotted cream ice-cream
  • fresh mint

Method: How to make warm banana tarts with cream

1. Melt the butter in a pan.

2. Slice bananas into a bowl (1 banana per person).

3. Pour over the melted butter and liberally cover mixture with brown sugar. Mix together using hands.

4. Roll out small plate-sized circles of pastry (1 per person). Using your fingers press around the sides of the pastry to form a tart, can be as neat or as untidy as you like!

5. Spoon out banana mixture into the tarts.

6. Place in oven on moderate heat for 20 minutes.

7. Serve with a good dollop of ice cream and sprig of fresh mint.

8. Flambe rum in a ladel and pour over each tart at the table being careful not to set light to table arrangements or guests!
