Try your hand at this fruity shellfish number from Patsy in Derby

Serves 5

Ingredients

For the prawns

  • 20 raw tiger prawns, peeled and de-veined, tails left on
  • 3 large ripe plantains, peeled, each cut into 10 slices
  • lime slices to garnish
  • bunch of parsley to garnish

For the marinade

  • 4 tbsp sesame oil
  • 1 tbsp hoisin sauce
  • 1 tbsp oyster sauce
  • 3 tsp honey
  • 8 spring onions, minced
  • 1 tbsp grated fresh ginger
  • 1 clove garlic, minced
  • salt and pepper to taste
  • few drops of tabasco sauce

For the mango mayonnaise

  • 240 ml mayonnaise
  • 350 ml mango puree, fresh or frozen (thawed)
  • 60 ml crème fraiche
  • 2 tbsp fresh lime juice
  • salt and pepper to taste

Method: How to make tiger prawns with mango mayonnaise

1. Mix the marinade ingredients together to make the marinade.

2. Place the prawns in a shallow dish, and pour the marinade over them. Cover and marinate for 4 to 6 hours in the refrigerator.

3. Preheat the grill. Transfer the prawns to the grill pan, and grill for 2 to 3 minutes on each side, until just cooked. Set aside to cool.

4. Heat just enough oil to cover the bottom of a large frying pan, and cook the plantain slices for 1 minute on each side or until golden and tender. Set aside on a plate to cool.

5. Arrange the prawns and plantains, alternating around the edge of the plate. Serve garnished with lime slices and chopped parsley.

6. For the mayo: Stir together all the ingredients in a medium-size bowl. Cover and chill until needed.

  2. Sewell food looked great i wish i was there to taste aswell lolxx mmmmm. even tho many people are not use to the spicy food they are used to mild food. i also like my food marinated aswell. i will like to give the ginger cake dessert ago when have got time to go get the recipes together.
