As her speciality on her menu, Helen Lederer’s Persian chicken has a lot to live up to in the celebrity week of Come Dine With Me

Ingredients

  • 1 pint of chicken stock
  • 12 strands of saffron
  • 1 large onion
  • 1 oz butter
  • 1 tablespoon of olive oil
  • 1 teaspoon of ground cinnamon
  • 4 chicken breasts on bone
  • 4 oz dried apricots halves
  • 1 oz sultanas
  • 2 ox almonds
  • Salt and pepper

Method: How to make persian chicken with apricots

1. Bring the chicken stock to the boil. Stir in saffron and simmer for a few minutes. Meanwhile chop the onion and add to melted butter and olive oil in a medium heated pan.

2. Once softened, add cinnamon and after heating through, place the mixture on to a plate.

3. Using the hot pan add the chicken breasts and brown them. Return the onion mixtures along with apricots, sultanas, almonds and black pepper, before pouring over the saffron and chicken stock. Boil up then reduce to simmer for 50 minutes.

  1. hi just wanted to say thanks for this recipe! just did it for dinner and both me and my other half loved it! I've added a few cloves and a half star of aniseed just because I think they go so well with cinammon. I don't think it change the recipe drastically because it is still very mediterranean. I've served it with cardamon cous cous with added golden fried onions, courgette and peppers. next time I'll add a few chickpeas to it too to complement the crunchy-ish almonds in the sauce. thanks for giving me a great idea!

  2. I thought this recipe was very creative and when I tried to make it I thought it was delicious! It was just beautiful. The suculent chicken had a watery flavorous feeling to it. The persian rice was something different. Something special that wasnt the same to any other rice I had tried...It was bountiful. Ten out of ten from me!
