Classic Caribbean chicken from Patsy in Derby for Come Dine With Me

Serves 5

Ingredients

For the chicken

10 boneless, skinless chicken thighs or breasts
1 to 2 tsp jerk seasoning
mixed salad leaves
1 cho cho
1 red onion, sliced into rings

For the honey orange dressing

2 tbsp balsamic vinegar
2 tbsp honey
2 tsp olive oil
juice of an orange
pinch of salt (optional)

For the sweet potato chips

sweet potatoes sliced into wedges or chunky chips
italian seasoning
sunflower oil

For the tomato salad

beef tomatoes
spring onions
basil leaves
olive oil
salt and pepper

Method: How to make jerk chicken with sweet potato chips and tomato salad

1. In a large bowl, mix the chicken thighs and the jerk seasoning together. Cover and leave to marinate for at least 2 hours.

2. Preheat grill. Remove chicken from the marinade and grill on a greased tray or hot barbecue. Turn frequently until cooked. Set aside to cool slightly. Cut into diagonal slices.

3. Combine all the dressing ingredients in a bowl or jar with tight fitting lid and blend well. Arrange lettuce leaves on plates. Top with chicken and onion rings. Drizzle with dressing.

4. For the chips: Deep fry the potatoes and season.

5. For the salad: Slice the tomatoes and chop the spring onions. Drizzle with olive oil, a handful of shredded basil leaves and seasoning.

I totally adore Come Dine With Me..for me it has to be one of the best things on tv! I wish the new episodes reverted back to the old format duration wise :(. I would love to b able to make jerk chicken..I was after Patsy's recipe but for some reason it has not been displayed! Could someone pls tell me I can do to achieve this?!?
