
Classic Caribbean chicken from Patsy in Derby for Come Dine With Me
1. In a large bowl, mix the chicken thighs and the jerk seasoning together. Cover and leave to marinate for at least 2 hours.
2. Preheat grill. Remove chicken from the marinade and grill on a greased tray or hot barbecue. Turn frequently until cooked. Set aside to cool slightly. Cut into diagonal slices.
3. Combine all the dressing ingredients in a bowl or jar with tight fitting lid and blend well. Arrange lettuce leaves on plates. Top with chicken and onion rings. Drizzle with dressing.
4. For the chips: Deep fry the potatoes and season.
5. For the salad: Slice the tomatoes and chop the spring onions. Drizzle with olive oil, a handful of shredded basil leaves and seasoning.
