This fresh take on a the school-dinner-fodder fish cake sees prawns and crab wrapped together to great effect

Serves 5

Ingredients

  • 10-15 prawns
  • 1 dressed crab
  • ½ tsp grated/crushed ginger
  • juice of ½ lime
  • crushed clove of garlic
  • 1 ½ oz butter plus butter for greasing
  • 2 beaten eggs
  • breadcrumbs
  • 230g potatoes
  • seasoning
  • sweet chilli sauce
  • lime wedges
  • salad leaves, spring onions & cherry tomatoes
  • ½ tsp lemongrass & coconut spice

Method: How to make crab fish cakes

1. Preheat oven to 170°c.

2. Peel & boil potatoes then rinse and mash potatoes and mix with crab, prawns, ginger, spice, garlic, lime juice and the seasoning.

3. Butter 5 ramekins & fill with mixture.

4. Place inside a roasting tin of hot water halfway up the sides of the ramekins and bake in the oven for 25-30 minutes at 170°c.

5. Turn out and chill until required. Just before serving, dip in beaten egg & breadcrumbs & fry for 2-3 minutes.

6. Serve with salad, sweet chilli sauce & lime wedges.
