
Turbot's delicate flavour is really teased out by the citrus salt in this fish recipe
1. 24 hours in advance of the meal make the citrus salt by placing the zest from 1 un-waxed lemon into a container of rock salt, seal the container and shake to disperse zest around container.
2. Preheat oven to gas mark 9, 280°c.
3. Massage the Turbot steaks with some olive oil and then massage the citrus salt into the steaks. Leave to stand for ½ hour to 40 mins. Season with black pepper.
4. Place in oven preheated to gas mark 9 for 25 mins.
5. To serve peel off the skin and serve with new potatoes and salsa verde.
