The dessert from Rosemary's menu is this delicious rhubarb crumble

Serves 5

Ingredients

  • 6-7 sticks stewed rhubarb
  • 240g packet crumble mix
  • 100g wholewheat muesli with dry fruit eg sugar-free Alpen
  • pinch ginger
  • packet orange/strawberry sugar free jelly or Diet 7-Up/Sprite Lite

Method: How to make rhubarb crumble

1. Preheat oven to 190°c.

2. Dissolve jelly in water, as per packet instructions. Stew rhubarb in the jelly mix with a pinch of ginger, or alternatively stew in Diet 7-Up or Sprite light.

3. Don’t allow jelly to set as it’s just to use the sweetness and flavour to sweeten the rhubarb.

4. Remove rhubarb.

5. Lightly grease an ovenproof dish, then pour in the rhubarb mixture.

6. Mix crumble mix and muesli and spread over the rhubarb.

7. Bake in 190°c oven for 30-35 minutess until golden brown.

8. Serve with vanilla light yoghurt.

This dessert can also be made with apples stewed in sugar free apple juice or cordial.
