Bludgeon your beans into this tasty Mexican treat

Ingredients

  • black beans (turtle beans) approx. 1 cup per person
  • sprig of water epazote (wormseed herb)
  • few cloves of garlic
  • 1 onion
  • oil
  • salt
  • cheshire cheese for garnish
  • tortilla chips

Method: How to make refried beans

1. Put dried beans in a saucepan and cover with plenty of water together with a sprig of epazote if you can find it. Bring the water to the boil and simmer till the beans are tender (at least one hour).The more they cook the tastier they are.

2. Add some peeled cloves of garlic if you like while the beans cook.

3. To make refritos fry some chopped onion in a frying pan with oil or lard till the onions are soft but not brown. Add the tender beans and mash adding some of the water from the boiled beans.

4. Stir the mixture till it forms a thick paste adding salt to taste. If too dry add some more water or oil.

5. Serve on a plate with crumbled white cheese such as cheshire sprinkled on top. Good eaten with tortilla chips or spread onto soft tortillas and rolled up to be eaten.
