1. Preheat oven to 200°C/Gas 6. Place all the vegetables in a large pan with 2 vegetable stock cubes and cover with boiling water. Bring back to the boil and then simmer for about 20 minutes, until soft.
2. Place snapper fillets on a well-greased baking sheet, skin side down, and cook in the centre of the oven for 10 minutes. Discard the skin and flake the fish into the vegetables and stock and simmer for a further 3 minutes.
3. Take the soup off the heat and cool for at least 20 minutes before blending until smooth. Return to a clean pan and place over a low heat. Season with salt and freshly ground black pepper and heat through gently, stirring constantly. Serve when piping hot.
