
Jim's pork satay and courgette salad began his effort to quash the dissappointment of last night's hodge-podge by Annette.
1. Thread the pork pieces onto satay sticks or metal skewers. Put the peanut butter, soy sauce and chilli powder into a bowl with an equal amount of water and microwave for 3 minutes: beware, it tends to boil over! Check the consistency regularly and add more water as necessary – the peanut butter absorbs a lot of water. You should aim for a thick hot chocolate consistency.
2. Meanwhile, grill the pork. When the pork is cooked, arrange it on the plates and pour the satay sauce over it.
3. Grate the raw courgette, mix it with the sliced chillies and lime juice, and serve immediately. The courgette tends to lose water fast, so it can’t be prepared in advance.
