Take on this beautiful panzanella from Paul Dwyer on the Edinburgh leg of Come Dine With Me

Serves 5

Ingredients

  • 8-10 pieces of hard stale bread
  • 6 ripe tomatoes, roughly chopped
  • 2 large red onions, thinly sliced
  • 2 sticks celery and leaves, diced
  • 1 cucumber cut into chunks
  • 8 fresh basil leaves bruised in a mortar
  • olive oil
  • salt and pepper
  • red wine vinegar

Method: How to make panzanella

1. Soak the bread in cold water for 15-20 mins. Squeeze out the water and crumble the bread into a bowl. Add the vegetables, oil, basil, salt and pepper and chill in the refrigerator for 2-3 hours.

2. Just before serving toss with wine vinegar and more basil leaves.
