Ingredients

  • 5 x cod fillets with skin on
  • 7 asparagus tips per person
  • finely-sliced mature chorizo (10 slices for sauce, then 3-4 slices torn over asparagus)
  • 1 punnet Spanish plum tomatoes
  • 1-2 large pinches smoked paprika
  • 5 ml black truffle oil
  • 3 large cloves garlic
  • pinch of saffron
  • fresh tarragon
  • large glass Rioja
  • 1 tsp caster sugar
  • 2 large pinches cayenne pepper
  • 4 bay leaves
  • small handful fresh parsley
  • olive oil
  • lemon juice
  • salt and pepper

Method: How to make pan-fried cod with chorizo and tomato syrup

1. Sweat down tomatoes in olive oil and garlic then add bay leaves. Add paprika and cayenne, then add the saffron.

2. Pour in Rioja and bring up the heat and reduce a little. Then add chopped chorizo, fresh tarragon and a little truffle oil, cook for about 15 mins on a low light.

3. Turn off the heat, add sugar and cover for two hours.

4. Sieve contents into a pan and warm.

5. Coat fish in oil, salt and pepper, and fry in a hot pan skin side down for 4-5 mins, then turn for 3 mins. Place pan in warm oven for ten mins.

6. Steam asparagus for 5 mins. Place on a plate then take tear up the remaining sliced chorizo. Place a little over asparagus, serve fish on top, and spoon round syrup.

7. Make a drizzle using finely-chopped parsley, oil, lemon juice and sugar. Spoon a little next to the syrup.
