A novel way to cook your mutton, from Charlie Balch in Cardiff's leg of Come Dine With Me.

Serves 5

Ingredients

For the mutton

  • 2 tbsp olive oil
  • 2 kg leg of mutton de-boned
  • 2 tbsp plain flour
  • 2 onions, thinly sliced
  • a bulb of garlic cut across
  • about 3/4 bottle of red wine
  • salt
  • freshly ground black pepper

For the herb crust

  • a teaspoon each of chopped fresh thyme, parsley, sage, rosemary and mint
  • few black peppercorns
  • cup of breadcrumbs
  • wholegrain mustard – about a tablespoon
  • big knob of butter

Method: How to make mutton cooked in red wine with a herb crust

1. Preheat the oven to 170°C. Put the oil into roasting dish with the garlic, and half bottle of wine and onions. Place the mutton on top.

2. Blitz the herbs in a food process. Add mustard and peppercorns and mix in with butter and breadcrumbs and slap onto the top of meat and cook in the oven for 3-3½ hours. Take the mutton out and rest. Reduce the remaining wine to make gravy.

  1. i am really frustrated not to find the full menu of charlie balch from cardiff i want to know about the sqaush gratin ? what was put in it i have purchased all ingredients for easter sunday lunch can you help if i remember he substituted with squash please e-mail A.S.A.P PLEASE OR MY SUNDAY LUNCH IS RUINED THANX FROM MARGY
