A novel way to cook your mutton, from Charlie Balch in Cardiff's leg of Come Dine With Me.
1. Preheat the oven to 170°C. Put the oil into roasting dish with the garlic, and half bottle of wine and onions. Place the mutton on top.
2. Blitz the herbs in a food process. Add mustard and peppercorns and mix in with butter and breadcrumbs and slap onto the top of meat and cook in the oven for 3-3½ hours. Take the mutton out and rest. Reduce the remaining wine to make gravy.
Herb crust recipe taken from “Breast of lamb with a mustard and herb crust” from More Rhodes Around Britain, Gary Rhodes, Hardcover, April 1995, BBC Books, ISBN 0563371587
