
Popping the food onto the fork in advance makes getting it into your mouth quicker and easier! Take a look at the rest of Tanya's menu.
1. Preheat oven to 180°c
2. Cut the mozzarella into bite-sized pieced and place in a bowl. Chop fresh basil and add to the mozzarella, then drizzle with olive oil, cover the bowl with cling film and place in refrigerator.
3. Cut the baby aubergine in bite-sized pieces and place in baking tray with tomatoes. Sprinkle with olive oil and Italian seasoning.
4. Bake in oven at 180°c for 5 to 10 minutes.
5. Place aubergine, tomato, and mozzarella on forks and serve.
