1. Bring the milk to the boil in a pan, then simmer until reduced to two thirds of original volume. Gradually stir in the rice flour, then the cream. Bring to the boil again, lower the heat and simmer for a further 15 minutes. Add the sugar and stir well, until dissolved. Leave to cool.
2. Now stir in mango and pistachio nuts. Transfer to a freezer-proof container and put in freezer until partially frozen. Remove from freezer and beat vigorously to breakdown the ice crystals. Put back in freezer and freeze until firm, before serving.
