
A fresh and tasty cheesecake from the kitchen of Linda Shanson in the London leg of Come Dine With Me.
1. Preheat oven to 200°c.
2. Crush up the digestive biscuits into a bowl and mix with the butter which has been melted. Press this mixture onto the base of a cake tin which has removable sides.
3. Mix together all the other ingredients adjusting the amount of sugar to suit your taste and the amount of raisins.
4. Pour this mixture on top of the base and cook in the centre of the oven at 200°c for about an hour till its smell wafts out and it is golden brown on top.
5. Insert a knitting needle or knife into the cake and pull it out. If it is wet leave the cake to cook more but if it is dry then turn off the oven and let it sit till cool.
6. Remove the sides of the cake tin and serve the cake decorated with fruit or cream as you please. Linda served it with pomegranate seeds.
