
You'll be the envy of all your friends if you make this Thai Grren curry... or you could get them all round and be their hero!
1. Blend chillies, coriander, lime juice, ginger, onion, mango chutney in a blender until they form a smooth paste.
2. Massage paste into the chicken and let it sit for a while.
3. Fry the chicken mixture in the pan quickly for colour then add the tin of coconut milk, fish sauce, salt and pepper.
4. Add the fine green beans and baby sweetcorn and simmer for approx 20 minutes.
5. Serve with boiled rice.
