It may sound odd, but a frozen salad will keep you chilled through

Ingredients

  • 1 cos lettuce – shredded
  • 1 sliced red onion
  • 3 sticks celery – chopped
  • 1 tin water chestnuts – chopped
  • 1 small packet frozen peas
  • half a jar of light mayonnaise
  • a packet of cooked, smoked, chopped turkey rashers (available from Matheson)
  • 2 eggs

Method: How to make frozen salad

1. Arrange the lettuce, onion, celery, water chestnuts and peas on a flat bottomed dish in layers.

2. Pour over half a jar of light mayonnaise.

3. Cover with clingfilm and leave overnight in fridge.

4. The next day, cover with 1 packet of cooked, chopped smoked turkey rashers, and 2 thinly sliced hard boiled eggs.

5. For an alternative, try prawns and sliced tomatoes, or peppers and olives for vegetarians.
