Oysters are natures aphrodisiac, so let these spicy little numbers set the mood alight, with the shallot vinegar to give them an extra kick

Serves 4

Ingredients

  • 4 oysters, fresh as possible
  • 20ml red wine
  • 20ml red wine vinegar
  • 1 shallot, finely chopped
  • 1 lemon, quartered
  • seaweed (from fishmongers)
  • ice cubes

Method: How to make fresh oysters with shallot vinegar

1. Mix the red wine, vinegar and shallot together.

2. Open your oysters with an oyster shucker, watch your fingers though!

3. Disconnect the oysters from their shells and lay them back in place.

4. Drizzle each oyster with as much shallot vinegar you fancy and down the hatch they go!

5. For an extra touch, ask your fishmonger to supply a bag of seaweed and some cubes of ice. Place them on a platter and neatly present your opened oysters on top, with 4 wedges of lemon.
