One of the greatest trains ever to grace the tracks, honour it with this haggis recipe

Ingredients

For the Haggis

  • 5 fresh chicken fillets
  • 5 fresh chicken fillets
  • 1 haggis (traditional / vegetarian)
  • 1 tbsp whisky
  • splash of olive oil/knob of butter

For the whisky sauce

  • 100ml of chicken stock
  • 2 tsp cornflour
  • 2 tbsp whisky
  • 100ml double cream

Method: How to make Flying Scotsman

1. Preheat oven to 180°c.

2. Clean and flatten the chicken. Place the haggis in a bowl, pour the whisky over and leave to marinate for a few minutes.

3. Make a patty of haggis per portion and wrap with chicken and bacon.

4. Drizzle with olive oil / butter, then place on a baking tray and cook at 180°c for 40 mins.

5. Whilst the haggis is cooking, make the sauce.

6. Add the cornflour to the stock and slowly bring to the boil until it thickens. Add whisky and simmer for 5 minutes.

7. Slowly add cream over a low heat.
