
Toby's spent years criticising other people's food so when he prepares a delicious fillet of beef recipe expectations are high.
For this recipe, Toby spent £77 on a fillet! It will still taste great if you take time to haggle the price down.
1. Pre-heat the oven to 220°c.
2. Ask the butcher how long you should cook your fillet for. A fillet of beef for 5 people should take about 25 mins., longer if you want it well done.
3. Take the beef out of the fridge a couple of hours before putting it in the oven.
4. Rub the fillet with olive oil and season with black pepper. Poor some olive oil into the roasting tray you will be cooking the beef in, heat it on the hob and, when it’s hot, sear the beef, i.e., put the fillet into the roasting tray and cook on each side just long enough to change the colour of the meat. This is to seal in the juices.
5. Put it in the oven and turn down to 180°c. Take out and rest for 10 mins. before serving.
1. The way I cook vegetables for a dinner party is to do them in advance and then heat them up at the last minute.
2. To make the mashed potato I used a mouli to ensure a smooth consistent texture. It should be noted, though, that Roland said he preferred it lumpy! To heat up the mashed potato, I put it in the same oven I cooked the beef in for approximately the same length of time (a bit longer if you like your beef medium rare).
3. Steam the green beans for just a couple of minutes so that they are a little bit underdone to allow for any cooking that will happen when they are microwaved later. Plunge them into cold water immediately to stop the cooking process. Dry them off and put them in a serving dish with a knob of butter and salt and pepper and cover with cling film.
4. Microwave them for 2 mins when ready to eat.
5. Boil the corn on the cob for 5 mins. Again, plunge into cold water.
6. Cut the corn off the cob and, as with the beans, put the corn into a serving dish with a knob of butter and salt and pepper and cover with cling film. Microwave for 2 mins when ready to eat.
