
A fancy beef dish from Patricia Varley in the London leg of Come Dine With Me
1. Place the beef fillet in a tray in a hot oven, along with a clove of garlic, a large knob of butter and a knob of lard for 20 minutes. This will cause the meat to seal.
2. Leave meat to “breathe” once it's been removed from the oven.
3. Chop one small onion finely and sauté in butter in a frying pan. Remove, and do the same with the mushrooms. Now add the stock and add all the other ingredients except the sherry and the cream.
4. Thicken the briande with cornflour and if it looks a bit light in colour add a little gravy browning. Add the sherry and cream for the last few minutes.
5. Then add the butter, lard and gravy into the pan, put in the meat and the sauce and wrap the oven dish in lots of foil. Cook in a high oven for around 1 hour.
6. Make sure the meat and sauce are completely sealed to keep in all the flavour.
