
A bright and breezy fish dish from Linda Shanson in London, for her fellow Come Dine With Me contestants
1. Chop up the fish into strips or chunks and put into a container. Cover the fish completely with freshly squeezed lime juice.
2. Add a couple of tablespoon of finely chopped coriander leaves, plus chopped onion and tomato. Make sure all the ingredients are covered with lime juice, cover with a lid and put in the fridge for at least 4 hours.
3. Serve no later than 24hrs later with tortilla chips or crackers. Great washed down with Mexican beer.
