
Give your roasted potatoes a sweet, sugary sheen
1. Preheat oven to 180°c
2. Cut the potatoes in small cubes of about one inch (2cm). Place water and sweet potatoes in a pan adding enough sugar to sweeten the water (usually ½ cup), then boil the potatoes until almost cooked. Rinse them off quickly in cool water to stop the cooking process, but try not to wash off all the sugary water.
3. Place sweet potatoes on two baking trays. Space them apart or else they will steam each other.
4. Divide the butter into six equal portions. Place the butter on the tray in between the potatoes.
5. Sprinkle sugar on top to caramelise the potatoes as they cook.
6. Cook in oven at 180°c for 20-30 minutes, checking to make sure that the potatoes are not sticking to the tray.
