A bit of beautiful berry goodness with Margaret from the Liverpool leg of Come Dine With Me

Serves 5-6

Ingredients

  • 4 eggs
  • 560ml double cream
  • 1 tsp vanilla essence
  • 50g caster sugar

Method: How to make berry brûlée

1. Preheat oven to 140°c

2. Place the cream in a bowl and heat in the microwave for 2 minutes until it is quite hot.

3. Beat the eggs with the vanilla essence and sugar until pale. Combine all of the ingredients together and place into ramekin dishes.

4. Place the ramekin dishes in a roasting tin that is half filled with hot water. Cook on 140°c for 1 hour. Do not let the water boil.

5. Sprinkle over caster sugar – 1 dessert spoon per ramekin, then brown under oven grill.

6. When cool place chosen berries on top to serve.

  1. Vanilla essence is a poor substitute for real vanilla bean. I'm surprised the guests enjoyed this brulee so much.
