Tracy Dobbie's mischievous beggar's purse should steal the show at any dinner party.

Serves 1

Ingredients

  • filo pastry – 2 sheets
  • aubergine – 1 thick slice of middle of aubergine
  • 1 cup ratatouille (Italian tomatoes, onion garlic, courgette and aubergine)
  • 1 slice goats cheese
  • 1 leek
  • egg and cream glaze mix
  • 1 packet cooked beetroot
  • 1 tbsp Balsamic vinegar
  • 3 tbsp Olive oil

Method: How to make a beggar's purse

1. Preheat the oven to 180°c.

2. Lay 2 x 10 inch sheets of filo pastry diagonally on top of one another. Place a thick char-grilled slice of aubergine in the centre. Place a dollop of homemade ratatouille on top. To make the ratatouille, roast the equal quantities of Italian tomatoes, onion, courgette and aubergine, with a clove of garlic and 2 tbsp olive oil in the oven. Cut the rind from a good quality individual goats cheese. Slice the cheese, and place a slice on top of the ratatouille and top with a little more ratatouille.

3. Gather the corners of the sheets of pastry together and twist firmly around the top of the mixture. Secure with a piece of string, and made a decorative tie round the top of the parcel with a blanched leek leaf. Glaze the pastry with a little egg and cream mixture. Cook in the oven at 180°c in a fan assisted electric oven until beautifully golden brown. Serve on a large white plate, and remember to remove the butcher’s string. Drizzle the vinaigrette round the purse.

4. To make the beetroot vinaigrette, liquidise beetroot (use vacuum packed fresh beetroot or fresh cooked beetroot – not beetroot in vinegar), add the balsamic vinegar and olive oil and adjust quantities to taste.
