Ingredients

  • rhubarb
  • pears
  • clotted cream
  • sugar
  • vanilla pods

Method: How to make baked seasonal fruit with vanilla cream

1. 24 hours before wanting to serve, place vanilla pods in sugar.

2. On the day of cooking, preheat oven to 180°c.

3. Place pears and rhubarb on separate baking trays with some butter.

4. Bake pears at 180°c for 20 mins and then place rhubarb in oven with pears for a further 15 mins.

5. Serve warm with clotted cream and vanilla sugar.
