Caprice introduces ethical eating to her mains with a wild, line-caught sea bream baked with tomatoes, garlic and basil, and finishes it off with a classic Caesar salad on the side for Celebrity Come Dine With Me

Serves 4

Ingredients

  • 800g wild line-caught sea bream (or 2 smaller ones), scaled, gutted and trimmed of fins
  • 8 large ripe tomatoes
  • 2 garlic cloves, peeled and finely sliced
  • small handful fresh basil leaves
  • 2 anchovies in olive oil, drained and chopped
  • dash of olive oil
  • dash of white wine
  • salt and freshly ground black pepper

Method: How to make baked sea bream with Caesar salad

1. Turn the oven up to its maximum heat. Slash the fish twice on each side to help it cook evenly and season well inside and out with salt and pepper. Put in a lightly oiled ovenproof dish or baking tin.

2. Slice the tomatoes and arrange them around the fish. Scatter with sliced garlic and basil leaves, then sprinkle the anchovies over the tomatoes. Drizzle with olive oil and a little white wine.

3. Place the fish in the centre of the oven and reduce the heat to 200°C/gas mark 6. Bake for around 25 minutes, or until the fish is firm to touch and the flesh starts to flake when prodded with a knife.

4. Leave the fish to rest for a few minutes, then serve with a Caesar salad. (If cooking two smaller fish, reduce the cooking time by 5-10 minutes.)
