These baked scallops come straight from fishmonger Jonathon Norris's fishmongers, yours don't have to.

Ingredients

  • 3 scallops per person
  • unsalted butter
  • garlic
  • parsley
  • lemon juice

Method: How to make baked scallops

1. Preheat oven to 200 °c.

2. First shuck the scallops and place three in each person's shell.

3. Make the butter by crushing a ¼ of a clove of garlic up with some rock salt, add a small amount of finely chopped parsley and squeeze the juice from a ¼ of a lemon into the butter.

4. Mould into a sausage shape and break a marble sized piece off and place on top of scallops.

5. Bake in oven pre-heated to 200°c for 7-8 mins.
