
This delicate starter comes from vegan amateur chef Nikki O'Leary in the Liverpudlian leg of the third series of Come Dine With Me
1. Set oven to its lowest setting
2. Cut each avocado in half lengthways and remove the stone, place on a baking tray and gently warm the avocado in a low oven. While they are warming cut the vegan bacon into strips and gently fry it in a couple of tablespoons of vegetable oil.
3. Once the bacon is slightly crispy remove from pan and drain on kitchen paper.
4. Gently warm the soya cream in a pan and add the vegan bacon and mix well. Set to one side and lightly steam the asparagus until it's cooked. It's good to leave it fairly crunchy.
5. Once the asparagus is cooked, gently re-heat the soya cream and bacon mixture, take the avocados from the oven and place on a starter plate.
6. Fan the asparagus out over to one side of the plate and pour the soya cream mixture into each avocado.
