
Get a bit of eastern promise into your life with this Thai starter
1. Finely chop the coriander and chillies, and squeeze the lime juice into a bowl. Add the prawns and mix well. Leave to marinade in the fridge for at least an hour.
2. Peel and cut the avocados in half, remove the stone, and slice into a fan shape. Dress the mixed leaves in extra virgin olive oil, serve the prawns on top of the leaves, and avocado on the side.
