The raspberry vinaigrette finishes off this loud salad with a suitable flourish.
Serves 4
Ingredients
For the salad
- 100g rocket
- 1 raddichio
- 8 cherry tomatoes (halved)
- 1 ripe avocado
- 1 ripe mango
- 100g blue cheese (cubed)
- 1 roast red pepper
For the vinaigrette
- good handful of fresh raspberries
- 2 tbsp of balsamic vinegar
- 4 tbsp of extra virgin olive oil
Method: How to make an avocado, mango and blue cheese salad with raspberry vinaigrette
1. For the salad: Mix all the ingredients together in a salad bowl
2. For the vinaigrette: blend the ingredients together
