These easy snowball cookies really are something new: they melt in the mouth and are such fun to make

Takes 1 hour to make, plus 12 minutes' cooking

Ingredients

  • 100g butter, softened
  • 150g icing sugar
  • 150g plain flour
  • 25g chopped walnuts
  • 25g chopped almonds
  • Grated zest of 1 lemon

Method: How to make snowball cookies

1. Preheat the oven to 180°C/fan160°C/gas 4. Cream the butter and 75g of the icing sugar until soft and fluffy. Stir in the flour. Add the nuts, a good pinch of salt and zest and mix until it forms a dough. Knead lightly. Cover in cling film and refrigerate for 30 minutes.

Tip

Keeps in an airtight container for 1 week.

2. Roll into walnut-sized balls and bake on a lightly greased baking sheet for 10-12 minutes. Tip into a large bowl containing the rest of the icing sugar and toss to coat.

3. To give as a gift, pile into a large jar with a screw top and decorate with ribbon.

  1. My dad was a baker and he made these for over 30 years from the late 1940's until he retired in the late 1970's. They were called Mexican Wedding Cakes then. Excellent to give as gifts and they are truly delicious. Just melt in your mouth good.
