1. Mix the pickling ingredients and pickle the mouli and carrot in the solution for at least 3 hours.
2. Lay the cucumber strips flat the layer the carrot on top followed by the mouli, the enoki mushroom and in the centre the shizo leaf.
3. Roll the strip together and push a skewer through to hold in place.
