Get this building block recipe under your belt and you're on your way to becoming a sauce supremo. Don't let the occasional lump knock your confidence, just strain the sauce though a sieve and carry on cooking.
Once you've made your classic white sauce you can gussy it up to suit whatever you're cooking. Add grated Cheddar for a rich cheese sauce - dreamy on cauliflower - or, if you're Christmas feasting the European way and serving fish, squeeze some lemon juice into your sauce, chuck in chopped dill and yule be laughing.
