Ingredients

  • 2 lemons
  • 3 medium eggs
  • 200g fructose
  • 55g plain flour
  • 200g ground almonds
  • 1 tsp baking powder

Per serving:
159 calories (based on 16 servings)

Method: How to cook low-calorie lemon and almond cake

1. Put the lemon in a saucepan, cover with water and bring to the boil. Reduce the heat and simmer for 1 hour.

2. Halve the lemon, remove the pips, then purée in a blender, skin and all.

3. Preheat the oven to 170C. Oil a 20cm, round springform cake tin and line with a disc of baking parchment.

4. Beat the eggs and sugar together until pale and thick.

5. Fold in the flour, baking powder, almonds and lemon purée.

6. Pour into the tin and bake for one hour until the top is golden.

7. Do keep an eye on it for the last 15 mins as fructose sugar is slightly more likely to catch. The cake will be fairly dark though.

8. Leave to cool for 10 minutes, then turn out on to a rack and cool completely.

  1. I have baked it twice and the 2nd time I thought I did it ok, but cake has still lots of moisture inside, is that ok? But it tastes anyway great. Should I bake it for longer or in higher temperature? Please help...

  2. Hi, This show is marvellous for all of us who want to loose weight but still like to have a wee treat now and again. I truly love the recipies and will be trying the Lemon Almond Cake at my next family gathering. It sounds so sqelchingly Lemony. Yum!!   4. I can't understand WHY anyone would want to convert things into cups or even ounces?! Just put the ingredients on the scales and weigh them in grams. The metric system IS international - that's the point - and much more accurate than cups which can vary depending on your equipment and how you use it.

I saw the show on Lifetime and I was hooked.I ordered the book,have lost 10 lbs.,am eating alot and alot healthier.My husband is on the wagon with me.I made him the chocolate cake,he is a dark chocolate fanatic.   8. I need to loose 90 pounds to be at my ideal body weight. I love sweets. I was looking at your recipe for the lemon almond cake but I am allergic to corn, how do I measure and subsitute fructose for sugar.

  11. I believe that our title as cook yourself slim is misleading, a 20cm cake makes 8 servings normally, that would be 320 calories per slice, a normal good homemade cake of similar proportion. By cutting it in smaller slices your give the impression that it is a low calorie cake. Good attempt but almonds are high in calories too. This cake is probably healthier because it has no butter or other fat in but still not a really skinny cake. Enjoy but don't be fooled to think you can eat loads!

  14. I love your TV show and recipies but I have one request. In Canada (and probably many other countries), we don't use the weight measurement for sugar,flour, nuts etc, we use the cup. Could you please put both measures in your recipies? It would truly make them international. I'm still trying to convert 55g of flour into cups. Thank-you.
