Drinks Punch of crema recipe

This is a popular Caribbean Christmas drink from the kitchen of Levi Roots, but its equally delicious at any time of year

Serves 6

Ingredients

  • 6 eggs
  • 400g/14oz can evaporated milk
  • 400g/14oz can sweetened condensed milk
  • 300ml/10fl oz dark rum
  • 1/2 tsp vanilla essence
  • 2 tsp Angostura bitters
  • Pinch of freshly grated nutmeg
  • Finely grated zest of 1 lemon
  • Golden caster sugar, to taste

Method: How to make punch of crema

1. Put the eggs, evaporated milk, condensed milk, rum, vanilla essence, Angostura bitters, nutmeg and lemon zest into a large bowl and whisk to combine. Add sugar to taste.

2. Drink straight away or pour into a bottle and store in the refrigerator for up to 3 days.
