A gloriously green gooseberry cocktail for summer nights

Ingredients

  • 75ml gooseberry infused gin (see below)
  • 10ml gooseberry syrup
  • 6 mint leaves

Method: How to make redcurrant negroni

Make your own infused gin

Put 250g gooseberries into a bottle of gin with 2 tbsp of caster sugar. Leave to infuse for a month. When ready to use, strain the infusion through fine muslin.

1. Shake all the ingredients in an ice-filled container.

2. Strain into a chilled martini glass. Garnish with a gooseberry.
