
Swapping soda water for Champagne gives a an elegant touch to this classic cocktail. Alan Cook at The Ritz created this effortlessly chic recipe
Serves 1
1. Cut the lime into quarters.
2. Place the brown sugar and mint leaves into a tall glass with the lime and muddle.
3. Add crushed ice nearly to the brim of the glass.
4. Pour the Rum over the ice.
5. use a spoon to turn and mix all the ingredients.
6. Top up the glass with Champagne.
7. Serve with two straws and garnish with a sprig of fresh mint.
