Easier to make than to spell, this traditional Argentine dipping sauce is ideal for barbecued meat. From John Rattagan at Buen Ayre, London

Serves 4

Ingredients

  • ½ cup olive oil
  • ½ cup wine or cider vinegar
  • 4 tbsp fresh chopped parsley
  • 4 tbsp freshly chopped garlic
  • 4 tbsp dried oregano
  • 4 tbsp ground sweet red pepper
  • 1 tsp paprika
  • 2 tsp salt
  • 1 tsp white pepper
  • 1 bay leaf

Method: How to make chimicurri sauce

1. Mix all ingredients in a bowl and pour about half a mug of boiling water over the mix. Combine again and let it brew for 15 minutes.

2. Add the olive oil and wine or cider vinegar (avoid balsamic since it makes the sauce too sweet). Mix again and serve.
