Fire up the barbecue and your appetite will follow. Try these grilled sardines with pine nuts and green pesto from Sacla' for the Real Food Festival

Serves 4

Preparation time: 10 minutes

Cooking time: 10 minutes

Ingredients

  • 16 fresh sardines or small mackerel, cleaned
  • 6 tbsp organic green peso
  • Juice of 1 lemon
  • 50g toasted pine nuts
  • Salt and freshly ground black pepper

Method: How to make organic green pesto sardines recipe

1. Preheat the grill or barbecue and lay the sardines or mackerel in a shallow dish. Make several diagonal cuts across the flesh of each fish and season with salt and pepper.

2. Brush most of the green pesto over the skin of the fish and inside the cavity.

3. Sprinkle over the pine nuts and drizzle with the juice of a lemon, then put the fish under a preheated grill or onto a hot barbecue and cook for 8-10 minutes, turning once and basting with any remaining pesto.
