
A creamy spinach and gammon pasta dish perfect for using up leftovers and new season spinach from Love Food Hate Waste for the Real Food Festival
1. Cook the pasta in boiling water according to packet instructions. Meanwhile, cook the garlic in a pan of boiling water for 4 minutes or until tender. Drain and toss into a large non-stick frying pan with the butter and olive oil and cook over a low heat until golden.
This recipe is a tasty way to use up a bag of the new season's spinach that seems to last forever. Parmesan often goes rock hard when it’s been stored for a while - this is an ideal way to use it up.
2. Add the spinach and cook until it begins to wilt, add a few tablespoons of creme fraiche and the chopped gammon.
3. Bring up to the boil, season with pepper and toss into the cooked pasta. Serve in a bowl with grated cheese.
