
Lemon curd is delicious as a filling in cakes along with butter icing or freshly whipped cream. Try this easy recipe using a microwave from Love Food Hate Waste for the Real Food Festival
1. Mix the lemon (or lime) juice and eggs together and strain the liquid into a bowl. Stir in the sugar and then add the butter. Cover the bowl with cling film and cook the mixture on high for 1 minute.
This recipe is an easy (and tasty) way to use up any eggs that may be approaching their best before date. If you still have more lemons to use up, cut into wedges and freeze, ideal for popping straight into drinks for a refreshing zing.
2. Remove the wrap and stir. Return the bowl, uncovered, to the microwave and cook on medium for 6 minutes, a minute at a time, until the lemon curd thickens. Whisk well after every minute, to prevent curdling.
3. Using oven gloves remove the bowl from the microwave and continue whisking until the mixture begins to cool down. The lemon curd will begin to thicken on cooling. Serve on toast or croissants for breakfast, or use to top yogurt or ice cream.
